Weekly Roundup Healthy Meals: Simple Snacks Edition - Grit Daily

Working on building a healthy lifestyle and coming up with healthy food ideas can be difficult for anyone. Yes, it may be a challenge, but in life all things come with a challenge. Eating healthy can always seem like a stressful and unpleasant thing, but I only think that’s the case when you let it be.

Don’t let your mind take over and present to you those unhappy thoughts about eating healthy, filter those negative thoughts out. Think about in the long run and how once you maintain this habit, it will be something that you can quickly put into your day to day routine.

Instead of making this a daunting thing lets create a good practice and making healthy dishes fun just like we enjoy making brownies or cookies lets take that same motive and apply it to make a healthy meal.

So, here are some simple, healthy food ideas that won’t scare you away but have you wanting to whip up some more healthy creations and add them to your recipe book. Some of these meals are things that I’ve created and meals that I’ve found online and modified to my needs. So, if you ever want to change something, please feel free to change or add something to fit your taste.

These are just going to be simple, quick, and easy snacks that you can put together when your hungry but don’t want to make a full feast for yourself. These recipes are quick and easy, as well as delicious, and can last you throughout the week as well. 

Turkey and Spinach Dip: It might sound disgusting but it’s actually appetizing and something that is quick and easy to make. (my creation)

Ingredients:

1lb of ground turkey or plant-based meat 

I full bag of spinach 

1 red pepper

1 yellow pepper 

1 cup of plain Greek Yogurt

Salt and Pepper 

Instructions:

Cut spinach into smaller pieces; then, you’re going to chop your pepper up into slices and make sure the slices are too big and bulky. Then you’re going to oil your skillet and put it on medium to high heat and then cook your meat first and once its halfway cooked place in your diced peppers and spinach. Once that is fully cooked through, you are going to dump your cooked contents in a bowl and add the Greek Yogurt. Depending on your preference, you can add how much salt and pepper and other seasonings as you please. 

Avocado Egg Salad: Another easy and quick appetizing snack you can have if you don’t want to much. 

Ingredients:

6 large hard-boiled eggs, peeled and chopped

1/2 cup finely chopped celery

1/4 small red onion, thinly sliced

2 small avocados—peeled, pitted and chopped

1 cup plain Greek yogurt

2 Tbsps extra virgin olive or avocado oil

Sea salt and freshly ground black pepper, to taste, about 1/8 teaspoon each

Instructions:

In a small glass bowl, whisk your yogurt with oil, sea salt, and pepper. Taste test and adjust to your preference. In a large serving bowl add avocado, celery, onion, and eggs. Pour your dressing over and gently toss to combine.
