MANSFIELD -- Leslie Kiser had lost 100 pounds twice, but each time he gained the weight again.
"I remember I was at the YMCA and I was on a scale. It read 299 pounds," Kiser said. "I told myself I would not get to 300. I had never weighed that much in my life."
Kiser said shortly after, he cut out eating fat, but could only lose 30 pounds.
"That's still a lot, but I was wondering what was going on, then I heard about Keto."
Kiser began eating according to the Keto Diet. The popular diet, known for its low carb, high fat regulations worked for Kiser. The former chef at Westbrook Country Club has lost 80 pounds.
"I don't see myself gaining it back," he said. "I've been on the Keto diet for a year and a half. I feel great."
Kiser made Keto diet food for his friends. Eventually, he had people begging him to open a restaurant. On Monday, May 21, he did just that.
The Keto Zone is now up and running at 1321 Lexington Ave. The menu adheres to diabetic needs, the Atkins diet and Keto Diet. Kiser said he has tried those diets too, losing 100 pounds each time, but gaining the weight back.
"Once you're in ketosis, or as I call it the Keto Zone, you run on fat," he said. "Most people run on carbs and sugars. I'll tell ya. Everyone I know who has gone on Keto has lost a lot of weight."
Since Keto Zone opened, Kiser is surprised at how well the first two days have gone.
All of the menu items are under 10 carbohydrates per serving, the new business owner said. Most of the meals are under five, he added.
"They are very tasty. I have cooked stuff on Keto that blew away some of the stuff I normally ate," he said. "A lot of the food, since you are using the good fats, are really good."
House specialties are sub sandwiches (the bun is made of baked parmesan and mozzarella cheeses) and the lasagna (noodles are also baked cheeses).
"I've mastered that because I've been cooking it at home for a year and a half," he said.
Kiser said his store is already busier than he expected.
"We're trying to get ready. I don't know how big it will be," he said. "When I first started I wondered if I could make it by doing something like this.
"Now, I'm worried how to be ready for the amount of people I'm going to get."
