Las Cruces volunteers turn healthy food into meals for migrants - Albuquerque Journal

A group of church volunteers in Las Cruces is taking healthy food bound for the trash and instead turning it into dehydrated meals for migrant families coming into New Mexico.

Nayeli Saenz is one of the volunteers with El Calvario Methodist Church in Las Cruces working to make this happen. Her job is to chop up the vegetables, sprinkle them with spices and place them in the dehydrator. She said families are often tired and hungry when arriving here and the food helps rejuvenate them.

“And it’s lightweight so they can travel with it on the way to their family member or sponsor,” Saenz said.

KOAT-TV will spotlight the program as part of its “The Good News Files” feature.

A key component of this effort is Backyard Farms, a conglomerate of small farm plots throughout the Las Cruces area, including urban and more traditional operations.

Rachel Ryan with Backyard Farms said her organization collects from area farmers produce they might otherwise throw out.

“This is stuff they can’t sell at the regular market because they have some sort of aesthetic imperfection. And we cut off those bad parts, we clean it up, and cut them up and freeze dry them,” she said. “It has the same nutritional value as fresh and has a shelf life of 25 years in a freeze-dried form.”

The story will appear on KOAT-TV Friday.
