HEALTHe Cafe in Thibodaux gives fresh taste to healthy food

Claire and John Kopfler opened HEALTHe Cafe in January as a lunch option for students at the ELearning center next door.

As a dietitian, Claire Kopfler said she realized how important it was for the students and staff to have healthy food options during their breaks.

But there weren’t a lot of healthy eating options in the area, so the Kopflers decided to open a modest kitchen and get to work.

They both have a restaurant background, meeting in Baton Rouge years ago when they worked at the same restaurant, Claire Kopfler said.

From there, they developed a simple motto, to make good food that is good for you.

“The common perception is that healthy food is bland and not fun,” Claire Kopfler said.

But for the most part, customers have been receptive to the new foods, including the ELearning and Nicholls State University students, she said.

“Our customers are so positive,” Claire Kopfler said. “They appreciate us being here and it feels like we’re making people happy.”

In March, the couple decided it was time to open their doors to the public.

With a full menu of smoothies, wraps, pitas, salads, soups and specials, each day has new offerings for a light and healthy meal.

Other options are available for those with nut, dairy or gluten allergies.

They also try to keep their specials menu completely vegan one day each week.

Claire Kopfler said she’s been surprised to see students trying new things simply because they are available.

The couple hopes to continue expanding their presence in the community by offering children’s cooking classes and participating in health fairs and other events.

The cafe, located at 810 N. Acadia Road, Thibodaux, is also now open for dinner Monday through Thursday from 4:30 to 8 p.m. and lunch Monday through Friday from 11 a.m. to 2 p.m.
